Vegan Chocolate Fudge Cake

Ingredients
- Chocolate Fudge Cake
- 4ozs (125g) vegan margarine (such as Vitalite or Pure)
- 1/2 pint (300ml) soya milk
- 2 tablespoons golden syrup
- 1 teaspoon bicarbonate of soda
- 8 ozs (250g) plain flour
- 2 ozs (50g) cocoa powder
- 8 ozs (250g) sugar
- Chocolate Fudge Topping
- 1 x 100g bar of vegan chocolate (eg Plamil)
- 1 tablespoon of Vegan Margerine
- 1 tablespoon of Icing Sugar
- 1 teaspoon of Golden Syrup
Method
- For the Cake:
- Melt margerine, syrup and soya milk (except 4 tablespoons) in a saucepan.
- Dissolve the bicarbonate of soda in the remaining soya milk.
- Sieve all the dry ingredients into a mixing bowl.
- Add the wet ingredients and mix thoroughly - using a hand whisk to finish off.
- Line an 8 inch (20cm) baking tin with greaseproof paper or baking parchment.
- Pour the mixture into the tin and bake in the oven - 180c/ 350F/ Gas 4 for 1/2 hour.
- Reduce the heat to 160c/ 300F/ Gas 3 for approximately 1 hour. If fan assisted it is less time so check and when cake tester or skewer comes out clean the cake is ready.
- For the Topping:
- Melt together slowly in a saucepan, allow to cool and spread over chocolate cake.

Hve made it lots of times. Excellent. On some occasions I have cut the cake in layers and filled with fresh strawberry puree, topped with whipped double cream.
