Linda's Lincolnshire Fruit Tea Loaf

Ingredients
- 1 pound mixed dried fruit
- 1 mug of black tea
- 1/2 pound Vegan Margarine
- 3/4 pound sugar
- 1 pound SR Flour
- 1 Banana mashed/beaten until smooth
- Pinch of nutmeg or mixed spice
- 2 x 1lb loaf tins
Method
- 1. Heat oven to 150 C Electric/ Reg 2 Gas.
- 2. Put tea, margarine, sugar and fruit in a large saucepan and warm through until the margarine has melted and sugar dissolved, remove from heat.
- 3. Beat in the flour and the mashed banana, mix well.
- 4. Line 2 loaf tins with greaseproof paper.
- 5. Divide mixture between 2 loaf tins and bake for approximately 1 hour 15 mins or until golden brown and when tested with cake tester or skewer it comes out clean.
